LGTM! I configured filebeat to ship into a custom index and verified I cannot see log data in the Stack Monitoring UI. Then, I added this new config to point to my custom index name and it works!

@lcawl I don't know if we need to change the docs, as we never really said anything about this. Until now, we only looked at a certain index name ( WDYT? |

Summary
Removes the filebeat constant and reads index name from config. Defaults to
filebeat-*. Fixes #56789.
