Revert "Support cover image heights and positioning changes"

Reverts #3758

I want to revert this change for now so I can do a better job at ensuring that existing cover images would continue looking the same. We got a report that a cover image looked significantly different: https://linear.app/gitbook-x/issue/RND-8512/cover-image-updates-to-cover-images-seems-to-have-changed-the-required, and avoiding a regression for customers is my main prio.

Looks like for the failing test, their website is not published anymore.
Weird things is it doesn't seem to take down the cached version, we'll have to look at that
