This is the smallest bump we can do (master is on v1.58.3). Arguably we could bump this v1.58.x as well, open to opinions.

Other branches are running older versions (v13: v1.54.0, v12: v1.52.0), so I'm not touching those right now.

* chore: Bump google.golang.org/grpc to v1.57.1 (#33265)

Update due to recent security patches.

* https://github.com/grpc/grpc-go/releases/tag/v1.57.1

* Update remaining `google.golang.org/grpc` to v1.57.1

This are primarily examples, but we still want to update to ensure coverage against CVE-2023-44487.

* go mod tidy
