Fixes #85633 (although I couldn't reproduce it, but I updated suspicious code).
99% of the time we shouldn't rely on the
theme_changed
signal in the engine code, we should use the notification instead. In most situations here we just have a window node which probably didn't handle theme changes well during the early days of development of Godot 4.0. The boilerplate to rely on child controls is redundant now.I left some comments in places where I couldn't quickly improve the code, but they should be fine for now.
