[no-release-notes] Add MariaDB 10.11/11.8 client auth coverage

• Add mariadb_clients stage that installs versioned mariadb client tarballs via new mariadb-install.sh.
• Add shared BATS recipe to switch mariadb versions and verify unauthenticated access.
• Amend README.md with new Dockerfile workflow.
• Add --print-output-on-failure in BATS entry point.
