fix: migrate nono profiles to new schema

Summary

The latest nono version 0.77.0 dropped some alias keys, see https://github.com/nolabs-ai/nono/releases/tag/v0.77.0 and nolabs-ai/nono#1826 from the profile schema.

Migration is needed: undo -> rollback (The old description of the key reads Alias for rollback. Controls which files are excluded from undo snapshots.)

I need to fix this for pi but included the remaining ones that use undo as well.

Previously:
