• not sure why portaudio: build with JACK on linux #157561 hasn't been merged, but we can also build portaudio with jack on darwin too
• supersedes portaudio: build with JACK on linux #157561
• fixes Mixxx not detecting JACK as an audio backend when PipeWire with JACK emulation is running #157529
• supersedes Mixxx: adding jack support for portaudio #205671

I think the CI failures on {aarch64,x86_64}-darwin are unrelated to the PR since the CI tries to compile LLVM which timeouts after 60 minutes.

Locally this works fine when I apply this patch on top of master.

If it builds on darwin, the diff looks good to me and portaudio builds from x86_64-linux with JACK support
