feat(ci): tracy gate counter preset

• Adds options to use tracy memory stack tree view but with gates instead of memory. Similar to how we did a flamegraph of Noir with gates, it makes sense to view them as stemming from certain function groups like we do memory.
• We hackishly pretend gate counts are pointers, and tracy plays along

NOTE: You may see the occasional tracy warning - this is known, but overall it works.
NOTE: This probably doesn't get ever gate, some are likely missed from copying

How to use:

• For users with a sysbox, run the following:
  export PRESET=tracy-gates
export USER=...sysbox user name...
ssh $USER-box "cat ~/aztec-packages/barretenberg/cpp/scripts/benchmark_tracy.sh" | bash /dev/stdin $USER
  And get a tracy breakdown for the default arguments, so client_ivc_bench with the special tracy gates preset, going to a trace file, copying to local machine, building tracy profiler locally, and opening it

You should get a view like this on your local computer, with an interactive stack tree from bottom or top with total gate counts:

we did some measuring with Cody, was off by 1% of gates but close

We went back and forth to make sure this works. I had a Wayland failure on Linux but it works out of the box on my Mac. As Adam said, a sanity check by manually printing the number of gates in ClientIVCBench/Full/6 gives (8 * 11306) + 17936 =108384 while Tracy overcounts to 111300, which is less than 3%. Good for now, great for getting a quick overview, possibly worth refining in the future, with time
