Custom excerpt separator for createContentLoader() #2688

Is your feature request related to a problem? Please describe.
I have a legacy blog to migrate. All the blog content use <!-- more --> as the excerpt separator. However, I found that in VitePress the separator is --- and there is no chance to customize that.
Describe the solution you'd like
Change the excerpt option from boolean to boolean | string | RegExp where people can possibly customize the separator.
