Prep for the catalog SHA bump that carries #4655 (the two post-handoff fixes from #4640 plus the 0.10.1 dependency floor) to users.

The Hermes catalog entry carries a version label next to its pinned sha. Their validator never parses it (scripts/validate_plugin_catalog.py — "cosmetic labels attached to the pin"), so nothing forces it to match, but advertising 1.0.1 in the catalog against a plugin whose own plugin.yaml still says 1.0.0 is just misleading to anyone reading hermes plugins info hindsight.

Two lines: plugin.yaml and pyproject.toml. 25 tests pass, lint clean.

Once this is in, the follow-up is a one-file PR to NousResearch/hermes-agent moving plugin-catalog/hindsight.yaml to this commit with version: "1.0.1".

The catalog entry carries a `version` label alongside its pinned sha, and the
pin is about to move to the post-handoff fixes (#4655). Bump the manifest so
that label is truthful rather than advertising 1.0.1 against a plugin that
still calls itself 1.0.0.
