Update workflow trigger to new trunk branch name #399

Description

The main branch was renamed from master to trunk. This is just catching the workflow triggers up with that.

Checklist

  • Make sure changes are covered by existing or new tests.
  • For at least one Python version, make sure local test run is green.
  • Create a file in src/towncrier/newsfragments/. Describe your
    change and include important information. Your change will be included in the public release notes.
  • Make sure all GitHub Actions checks are green (they are automatically checking all of the above).

Changes needed for this

* Invert logic for single file. 22.8.0 fixed the logic such that single_file=False is correct when you have more than one file
* Pin versions of towncrier and sphinx towncrier to reflect this (so we get the right config)
