fix permission denied when docs compile

compile trino-docs will appear permission issues ,i think need add --privileged=true

Closing since we haven't heard complaints about this recently and I also couldn't reproduce.

In addition running containers in privileged mode is a bad idea anyway.

Feel free to re-open or suggest alternative solution if still needed.
