Document development instructions on Apple Silicon / M1

We need to add a section in middle to specify the Apple M1 specific build instructions and the workarounds we had to do to get it working on M1.

Hey @srevinsaju sorry for not working on this issue from long. I am being a bit busy. Also, I found some new stuff, that breaks guiscrcpy on m1 Macs, I have found workarounds to fix almost all of them. I plan to make a YouTube video on installing the software specifically for machines on the apple silicon chip.

But I might need some time to make it because I need to start afresh with the Homebrew, python, and poetry installations so that I can reproduce all the errors I faced and document them, and make a video on fixes.

I hope this is not a big problem. I will try to add the docs and publish the video as soon as I can :)
Meanwhile, I will also look on how we can publish this project as a formula on homebrew for easier setup!
