Replace the shared flat segmented control on iOS with a themed UISegmentedControl, restoring native Liquid Glass selection, dragging, and accessibility behavior. Android keeps the existing shared control.

The track uses a restrained theme tint. Dark mode uses the primary color and its matching foreground for a distinct selection; light mode uses the secondary colors. Unselected labels get a contrast adjustment against the track.

Known limitation: during a glass drag, UIKit can retain dark selected text after the selection fill becomes transparent. Reproduced in a standalone UIKit app; explicit highlighted-state colors and updating the selected color during tracking did not solve it. Keeping the native behavior rather than adding a fragile workaround.

Validation: mobile typecheck and targeted lint pass; iOS native build succeeds. Verified all six themes in light/dark mode on the iPad simulator, plus tap and drag selection.
