Upgrade deno to v2.1.1

Old Deno pin log to 0.4.20, which block zombienet-sdk upgrade reqwest

I wanna upgrade to the latest v2.1.4. However, I meet a mysterious issue:

I did some research, but unfortunately, I didn't know why, so I gave up, and v2.1.1 is new enough.
The issue came from denoland/deno#27067

Maybe relates to my network issue, I ran tests in my local machine, got:

Hey @jasl, sorry about the delay. The main issue of this error (and other timeouts) is we have a couple of test that was using rococo and that chain was deprecated (and decommissioned ). So, I will merge this one and then change those tests.
