OCPBUGS-80459: Bump google.golang.org/grpc to v1.79.3

module has been bumped to github.com/openshift-sustaining/grpc-go@v1.75.1-sec.1 that contains backport of the original CVE fix in 1.75 module compatible with golang 1.23

Closing in favor of #8512. We cannot update all grpc-go versions to a single specific version — it depends on many factors beyond grpc-go itself (transitive dependencies, Go version compatibility, API stability across modules). The replacement PR addresses the CVE through a more targeted approach.
