Is there any reason to not template string the generated value so we don't have to worry about this in the future?

Not really - the problem is that TSVB visualizations always set the color value explicitly in the saved object, even if that color value is just the default. The sample dashboards are just constructed of pre-defined saved visualizations, so there's not really any dynamic generation, just a loading of the objects as they're defined here. I did actually test if I could just leave the value out, but it's required.
So we could dynamically point to the OUI variable that should be used as the TSVB default, but it wouldn't really gain us anything, because either way it isn't explicitly linked to the default value in TSVB.
