This PR updates the opentelemetry-collector dependencies to open-telemetry/opentelemetry-collector@0550b08.

Is picking up v0.143.1 instead of v0.143.0. Probably the method we used for get the vrersion is not the best one.

I'm not sure about it, but yeah, let's see 👍

I tried to reproduce the CI mannually in my laptop, and it picked up the v0.143.1. But a PR to make this accurate is already opened #45477
