gnome: update to GNOME 49

I pushed some extra commits to also update our GNOME flake input, and update the sass variables we pass into the theme to match the changes upstream.

Unlike the space related CI failures from #1961, commit efd8045 ("flake: update nixpkgs input") from this PR definitely breaks CI because it does not address the upstream NixOS/nixpkgs#457713 rename that is already pending in #1961.

No worries.

#1968 should fix commit efd8045 ("flake: update nixpkgs input") and #1970 potentially prevents future problems. With #1969, CI should be passing again.
