This includes dropping the PHP 8.1 Alpine 3.16 variant, that was temporarily added in docker-library#1412, but should be obsolete now that Nextcloud 25 is EOL See also nextcloud/docker#2102

Modelled after #1988
While creating docker-library/php#1463 and removing various version-specific additions/exclusions for the PHP image, I noticed an addition made specifically for Nextcloud v25, which would remain until EOL.
Given that v25 is now marked as EOL on https://github.com/nextcloud/server/wiki/Maintenance-and-Release-Schedule and the PR mentioned above will probably land soon as well, I created this as a follow-up.
