[Live555] Update to 2026.01.12

The download link for the Live555 source code has been changed, and the old version is no longer available for download. As of February 1, 2026, the only version I found on the official website is 2026.01.12.

• Changes comply with the maintainer guide.
• SHA512s are updated for each updated download.
• The "supports" clause reflects platforms that may be fixed by this new version.
• Any fixed CI baseline entries are removed from that file.
• Any patches that are no longer applied are deleted from the port's directory.
• The version database is fixed by rerunning ./vcpkg x-add-version --all and committing the result.
• Only one version is added to each modified port's versions file.

Maybe there's an argument that we should not put leaf projects that can't provide stable download URIs in vcpkg :( . No change requested for now but something we should consider.

Can you look at the blocks for UWP in ci.baseline.txt and ci.feature.baseline.txt and possibly move that into a "supports" if it appears upstream has no intention for UWP to work?
