grpc will be updated by the PR I mentioned above.

Sure.

How can I participate?

Study the last port updates. It help to understand the amount of work:

• [grpc/protobuf] Update grpc to 1.65.5 and update protobuf to 5.26.1 #39800
• [grpc/protobuf] Update grpc to 1.60.0 and update protobuf to 3.25.1 #35781

Hint: vcpkg doesn't update ports in isolation. It requires integration with all reverse dependencies.
