Implement nuxt-matomo connector

To properly track visits, we should use the following package:
https://github.com/pimlie/nuxt-matomo

Describe the solution you'd like

• track open/copy clicks
  • e.g. hook into these functions to set a custom variable
• track collection visits

Additional info
Matomo is quite data privacy friendly and cannot identify individuals, so no need to worry. Due to GPDR we need to inform about a cookie being set.

I recently used https://github.com/AmazingDreams/vue-matomo in a vue project, with also has nuxt support. Don't know which one to choose for this project though. Imo seems like the better option to use.
