Upgrade to BDK 1.0

We should upgrade our BDK dependency as soon as it is reasonable to do so, i.e., potentially when it reaches beta status, latest with the stable version.

Yeah, technically it has been unblocked on upstream's main since ~last week. However, we're kind of still blocked on LDK 0.0.119 being released. I intend to start working on the LDK upgrade some time this week so we have it ready as soon as it will be released. Once it lands (or based on the LDK upgrade PR) we can then start working on the BDK 1.0 upgrade path.
