Add except method to Model

Hi,

I was browsing the closed issues and I just could not find a discussion about implementing an except() method.
I think this can bring just as much value as the existing only() method.
Please do link the related issues if exists.

I would be happy to PR it if this is indeed a feature we would want to add.
