Bump openapi generator version in java.sh

'v7.14.0' includes this enhancement OpenAPITools/openapi-generator#21269 which can be used to fix this issue kubernetes-client/java#3076.

Updating now to the latest v7.16.0 as this seems sensible to pick up other improvements and fixes.
