krakend-otelversion, tag it, and update it here: krakend/krakend-otel#38Allows to define options at the endpoint level, and at the backend level.
t also makes moves the otel proxy middleware outside to make sure that we never add a new middleware on top of it , and that is always the outest one to measure every other processing at the proxy layer.
