Added support for affiliations in docx (via slightly modified lua-filters that better align to quarto-standards). Furthermore, replaced author names with defaults for future use as template.
Also added a table and a figure.

including using modified lua-headers that are close to quarto-affiliation syntax,
included figure and plot, switched from book to project: default.

@kapsner Reminder for me: Think about including the lua filters in the Repo (./meta/*.lua) and adapt the path in _quarto.yml.

For now I decided to not add them and instead maintain those filters elsewhere and always load the latest version when rendering the project
