When I used redshift on my mac, I noticed that I get a red hue when I use a daytime temperature of 5700. I changed it to 6500, but I think since some people may just copy / paste the redshift.conf file, it is better to use a sensible default of 6500 instead of 5700, so the screen looks correct.

Maybe other operating systems like Linux or Windows use 5700 by default, I don't know. This is me testing on my MacOS Big Sur 11.3.

6500K means no adjustment, it's what we commonly define as pure white. It's the default everywhere.
5700K is a colder temperature is thus more red.

I think 5700K is a reasonably sensible default, and certainly appropriate for new users. Additionally, if the default was 6500K, a new user that's testing out the program during the day think it is not working as it wouldn't apply any effect.
