chore(website): update docusaurus to latest version

Summary
We've been on a beta of docusaurus for a long time, now that it's out of beta I think we should upgrade.

I ran npx docusaurus-init, copied ot over, and tried to get Jest's data in. It seemingly works correctly, but another set of eyes would be appreciated.
