Refactor themes #200

Changes structure to allow for multiple in-app themes
Adds support to react-native-elements theme structure for background colors
- TypeScript changes based on:
  - https://docs.expo.io/guides/typescript/#configuring-the-typescript-compiler
  - https://reactnativeelements.com/docs/customization#typescript-definitions-extending-the-default-theme
Moves all direct color references to theme references (except for splash screen and web browser)
