This PR consolidates and updates all the relevant info for instantiating and loading big models. Previously, it was split between Large model loading section in the Model API and the Instantiating a big model doc, which caused some important stuff (
low_cpu_mem_usage) to be missed/overlooked because users weren't expecting it to be in the API docs.
