Update gradle plugin documentation for new plugins (smithy-lang#2140)

Updates the Gradle plugin guide to match the new split-plugin approach introduced in smithy gradle plugin release 0.8.0. Also adds Groovy code examples in addition to Kotlin dsl examples. --------- Co-authored-by: Hayden Baker <[email protected]>
