Make sure that the Matter SDK logging level is passed to the Matter Sever when the beta flag is set too.

While at it, extract all server flags into it's own variable to avoid duplicating all flags.

Walkthrough

Walkthrough

The recent update to the Matter SDK, version 6.3.1, aims to resolve log level issues when the beta flag is used. The config.yaml file for matter_server has been updated to reflect this version change. Additionally, the matter-server/run script has been enhanced to dynamically build the matter_server_args array, centralizing server configuration parameters and improving maintainability.
