fix: Update @opentelemetry/instrumentation dependencies

Ran npx yarn-update-dependency @opentelemetry/instrumentation over the repo.

This fixes an issue with the aws lambda layer build where @opentelemetry/instrumentation-aws-lambda used an older version of @opentelemetry/instrumentation without named imports of import-in-the-middle.
