The two chain-engine spill-decompress knobs (block_batch, records batched per parallel sort call = MAX_BATCH_PER_CALL; file_granularity, spill at file vs block granularity) lived on `SortOptions` as `#[arg(skip)]` fields baked to their defaults, with no way to override them from the standalone `sort` command. `Sort::to_sort_options` hardcoded 4 / false. Expose both on the `Sort` CLI as hidden (`hide = true`) expert overrides for fleet/benchmark tuning, and project them through `to_sort_options` so they reach the engine. Defaults are unchanged (block_batch = 4, file_granularity = false = block-parallel), so behavior is identical when the flags are omitted. The flattened `runall` path is unchanged: it still takes the engine defaults. Docs on both structs updated to match.
