Drop support for EOL Node versions?

As stated in title, is it worth dropping support for all of the EOL Node versions we're currently testing against in the CI?

I would avoid the semver-major version bump for now.

Morning @mcollina, is it worth revisiting this now that most of the Fastify repos have moved to supporting Node 20 at a minimum to be able to migrate to node:test?
