Stablecoins page updates

Description

Face-lift for the /stablecoins page

Main updates:

• Swapped out the Dai spotlight and replaced with USDS, the successor to Dai
• Added two more cards to the highlighted section inluding GHO from Aave, and USDGLO as an initiative working to fund public goods
• Fetching more coins, effectively any that didn't appear to have lost their peg, down to $500k mktCap (paginated by showing 10 at a time)
• Add filters for coin type, and adds a "Peg" column to see and filter by the currency it's pegged to
• Added spark.fi to interest-earning section
• Updated the examples in the "How they work" section (and refactored that component, but that's a visual aside)
• Added 5 more resources to the Dashboards/Education section
• Removed algo warnings
