Update and extend streams challenges

This PR builds on top of #816 :

• Update generated pipeline for logging-streams challenge to match most recent version
• Update mappings for logs data stream to match most recent version
• Add pipelines, component and index templates for child streams and add routing challenge logging-partitioned-streams:
  • child1: attributes.service.type == redis and attributes.redis.slowlog.key exists and attributes.redis.slowlog.id exists
  • child2: body.text contains eden.elastic.dev
  • child3: resource.attributes.host.name starts with filebeat
