[8.15] Switch serverless ITs to vector-optimized serverless project (#795)#810

AD (anomaly detection) and DFA (data frame analytics) ML endpoints are no longer available in general purpose ES projects in QA, so this is switching IT tests to vector-optimized projects. This is a temporary workaround. Ultimately we need to differentiate serverless project type depending on Rally track. (cherry picked from commit 530092b)
