Upgrade EUI to ~14 and other dependency upgrades. Some unused dependencies have also been removed (mermaid, json-loader).
Note: I was not able to get @elastic/eui to work with babel-loader as we've done in the past. I believe this is related to the dynamic imports changes in elastic/eui#1924.
