[Transform] consider passing `?verbose` flag to pipeline simulations in `_preview`

With #60433

Pipelines now have a VERY useful verbose mode that shows debug output for failed processors.

Having a verbose option to _preview could aid users in debugging their transform and potentially why a processor is failing for a given document/bucket.
