Summary
Changes default e2e and storybook theme with eui themes in preparation for migration to eui theme as default.
Details
This PR is meant to act as a simple switch to the eui theme in all VRT screenshots with no other changes. Later in #2175 we will merge the default chart theme with the eui theme.
