What does this PR do?

Start to add documentation for the profiles support in EDOT.

@florianl From my POV, the docs can be merged at any point if we're happy with them. They'll appear as "Planned" and as "GA" when 9.2 comes out.

Another thing: @colleenmcginnis and I are of the opinion that changelog entries are not necessary for docs-only changes. @ebeahan WDYT?

@florianl @theletterf there's the label skip-changelog to signal that the PR does not require a changelog fragment.
I tend to agree with @theletterf that docs-only PRs should not require changelog fragments (those are used for enhancement/bugfixes that need to appear in the release notes)
