This tool is non-robust in nearly every way; I designed it for me to use, but I'm happy for you to try to do so as well. I've only built in export capabilities for the portions of Moodle I use, so it may (likely?) crash for you if you use something I don't. Making into a better tool would probably be worthwhile.
Here's how to use it:
In Moodle, backup your course. Download the zip file it creates. Sometimes it has a .mbz extension.

In current versions of Moodle, it seems to be a compressed tar file, and I decompress via tar xvfz.

In past versions of Moodle, it was a zip file, and I uncompressed it by renaming it to a .zip file.
Unzip it to a directory somewhere. The top level files in your Moodle dump (typically a bunch of xml files) should be sitting right in that dump directory, not a subdirectory.
You then need to make sure you have an "output" directory ready to receive the results. I have a directory called outputtempl; just copy that entire tree into a new directory called output, in some temp location somewhere.
Sitting in the main directory, first type
mvn clean compile assembly:single to build the code. (Make sure you have Maven installed).
Then run the script "runit". If all goes well, that's it.
