For anyone trying to make sense of why we'd be using v2.0 while we still haven't released a major version of dependabot-core: this is a relic of having much of the updater logic in a private repository. It was on v2.0 when that logic was absorbed into dependabot-core

This will add a date based version tag to the docker image published on main.
This fixes some downstream projects relying on a comparable version tag.
