Align artifact naming with TemplateDotNetTool pattern

Description

The artifact name for documentation outputs was inconsistent with the TemplateDotNetTool template pattern. Changed documentation to documents in both build and release workflows.

Changes:

• .github/workflows/build.yaml: Renamed upload artifact from documentation → documents
• .github/workflows/release.yaml: Renamed download artifact from documentation → documents and updated step name for consistency

This change only affects internal CI/CD artifact naming. The artifact contents remain unchanged (docs/*.pdf and docs/buildnotes.md). No functional impact on the tool or release process.
