datafusion-contrib#256 introduced by mistake an upgrade to the arrow library, which seems to be giving problems for some folks who are not yet prepared for arrow 57.2.0 and need to remain in 57.1.0. As there's no reason that this library restricts the arrow version to 57.2.0, this PR rolls it back to relax the requirement to 57.1.0
