feat: add new prop to use map for routing

Did not want to leave you hanging. The repository is in a transitional state, and is being migrated under the Apache Iceberg project itself (see: apache/iceberg#9466 and apache/iceberg#9641), so we're not really reviewing PRs in this repo as it's all transitioning there.
