Description of your changes

This PR adds Evaneos to the Crossplane public adopters list, using the data provided on the adopters form.

Thank you for sharing your Crossplane adoption story with the community @grams! 🙇‍♂️

It also fixes some minor extra whitespace issues in the adopters markdown table.
